“Hello everyone, I’m Nonna Pasqualina and today I will prepare the crocchè for Smaac”

Nonna Pasqualina reveals her secret: The recipe of the famous Pirate crocchè that all travelers go crazy for.


We are right here, in this gem in the rock a stone’s throw from the sea in Praiano on the Amalfi Coast.Of Neapolitan origins Nonna Pasqualina once sewed costumes and sold them to those who passed by.Shortly after he started the Pirate Restaurant with his great love.Since then, has she never stopped cooking for her guests, everyone’s favorite dish? The crocchè.

(Recipe for 30 crocchè)


1 kg of potatoes

6 eggs100 g of ham

200 g of parmigg

400g of provolone

Boil the potatoes in their skins for about 45 minutes with coarse salt.Once cooked, remove the skin, mash them with a potato masher and add the Parmesan, the egg yolk and the chopped cooked ham.

Mix everything and make the shape of the crunches with your hands. Cut the provolone into cubes and add a cube inside each crunch.Beat the egg white. Dip the crunches first in the egg white and then in the breadcrumbs. Then boil the seed oil in a pan and fry the crunches.
